Beautiful Rosettes cake

This cake is the easiest cake you can make that also will make all your guests stop and STARE. It looks so gorgeous, and the best part about it is how simple it is to make. Anyone can do it and make it look beautiful!!



This is a delicious red velvet cake with a cream cheese frosting.

The outside is the same frosting, died with a little bit of red food coloring.

I added edible pearls to give the cake more of a shine and glamorous feeling!!

Ingredients:

For the Cake:

  • 3 cups cake flour
  • 1 tsp baking soda
  • 2 tbsp unsweetened natural cocoa powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 2 cups granulated sugar
  • 1 cup canola or vegetable oil
  • 4 large eggs(separated)
  • 1 tbsp pure vanilla extract
  • 1 teaspoon distilled white vinegar
  • liquid or gel red food coloring
  • 1 cup buttermilk, at room temperature

For the cream cheese frosting:

  • 16 ounces full-fat block cream cheese, softened to room temperature
  • 1/2 cup unsalted butter, softened to room temperature
  • 4 1/2 cups confectioners’ sugar
  • 1 tbsp milk
  • 1 1/2 tsps pure vanilla extract
  • pinch of salt, to taste

Instructions:

  1. Preheat oven to 350 degrees, coat two 9-inch pans with non-stick spray
  2. Make the cake: Whisk the flour, baking soda, cocoa powder, and salt together in a large bowl. Set aside.
  3. Beat the butter and sugar together
  4. Add the oil, vanilla extract, egg yolks, and vinegar and beat
  5. Add the dry ingredients and buttermilk, alternating
  6. Add desired amount of food coloring
  7. Whisk the 4 egg whites until peaks form. Fold into cake batter.
  8. Bake cakes for 30 min
  9. Let the cakes cool for 1-2 hours
  10. Make the frosting: Beat cream cheese and butter together
  11. Add the confectioners’ sugar, milk, vanilla extract, and salt
  12. Assemble: use a serrated knife to slice a thin layer off the cake so they’re flat
  13. Place first layer of cake on stand. Add frosting on top
  14. Place second layer on top and add frosting to the top and sides with a spatula

Decorating:

  1. Add food coloring to the remaining frosting with desired color
  2. Pipe swirls around the whole cake, start at the bottom and work your way up, fill in any gaps with a dot of frosting (I like Wilton tip #21)
  3. Add pearls if desired.
