Method
For the Cake
- Preheat oven to 350 degrees. Cover two 9-inch round pans with non-stick spray.
- Stir flour, sugar, baking soda, salt, and cocoa powder. In another bowl, whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
- Mix the dry ingredients into the wet ingredients until just combined.
- Divide the cake batter evenly among the cake pans. Bake for 30 minutes or until toothpick inserted in the center comes out clean.
- Remove the cakes from the oven and let cool completely.
For Cream Cheese Frosting
- With a stand mixer or or hand mixer, mix the cream cheese, sugar, and butter on low speed until incorporated. Increase the speed to high, and mix until light and fluffy.
- Reduce the speed of the mixer to low. Add the vanilla, raise the speed to high and mix until fluffy. Store in the refrigerator until stiff.
